Made It Monday: Peach Cake

An experimental birthday cake this time. I really want to start branching out to some new recipes, so I tried out a peach cake with a brown sugar fluffy frosting. It was alright, but way too sweet overall, and the cake was a bit too dense (only to be expect, I suppose, when I had a cup less flour than was required!! :D). Next time I’ll aim for a slightly fluffier cake, and probably use a cream cheese base for the icing to cut the sweetness, though I’ll probably still flavour it with brown sugar because sweetness aside, the flavour combo was amazing. And despite the denseness of the cake, the taste was MWAH, so. A promising start, with some tweaking required.

The biggest problem was that I made everything the day before, because I had limited time on the day between getting home from work and needing to be at the restaurant. Time-wise, a solid plan. Reality-wise… yeah. The fluffy frosting split. I had slightly deflated sugary egg whites, with a brown sugar syrup in the bottom. Sigh. And then I was like – crap, how am I going to decorate this?!?! because I kid you not, when I piped the fluffy frosting on it looked literally like dog diarrhoea >.< So you know. Cake disasters: they happen to us all!! πŸ˜€ πŸ˜€ πŸ˜€ And in the end, disguising it all with the peaches was a sound plan, because the fruit helped cut through the sweetness (most people thought it actually could have used MORE fruit for that reason, myself included).

So: peachy birthday cake. Woo!
