Made-It Monday: Unicorn Cake

Welcome to #MadeItMonday, where I post something I’ve made in the previous week, and where you can join in and post something you made too! The rules are easy: post a pic somewhere of something you’ve made in the last week (ish; let’s say in the last month as the hard-and-fast) and tag it. Sit back and enjoy scrolling through all the beautiful things we’ve collectively created, and celebrate the fact that humans can be awesome!

Quick lil unicorn cake this time for the family birthday girl, who has been unicorn-obsessed since before they were popular <3 (Clearly not influenced by her mother, ah ha ha no way.)

I’ve been sick all week with a horrible cough on top of the whole gluten-induced misery, so I literally only baked the cake the morning of the party. I made the unicorn topper while my mum and her husband were heating the soup for the main course and the kids were playing with all the various household unicorn toys, and having a few rounds of Uno, and I iced the cake in between soup and dessert while a wonderful family friend ran some games for the kids >.< Hardly a paragon of organisation, but otoh it wasn’t really stressful, since I really do have the most amazing, supportive bunch of fam/friends you could ask for.

So you know. Unicorn cake: white chocolate mud cake (less sweet than usual due to the amazing organic flour I’ve found and fallen in love with), with blackberry jam, and apple-puree-in-buttercream between the layers. Lovely and moist, flavoursome but not toooo sweet. My husband is not a cake fan AT ALL, and he really liked this. So that’s a win.

Shout out also to my mum and another friend who helped roll all the strands for the horsey hair 😉 :3 <3 (And to same friend for doing all the decorations while I vacuumed the house, and to earlier-mentioned friend for washing all the dishes while same, and to my mum for making the food. THANK YOU GUYS SO MUCH.)
