Made-It Monday: The Next Cake

Welcome to #MadeItMonday, where I post something I’ve made in the previous week, and where you can join in and post something you made too! The rules are easy: post a pic somewhere of something you’ve made in the last week (ish; let’s say in the last month as the hard-and-fast) and tag it. Sit back and enjoy scrolling through all the beautiful things we’ve collectively created, and celebrate the fact that humans can be awesome!

And lo, behold, the second cake…

This one’s the same recipe as the last one, a GF and lactose-free fudge mud cake. This time, though, it’s filled with lactose-free caramel, popcorn, and lactose-free cream cheese frosting (I wanted something to cut through the sweetness, and had some left over in the freezer from an earlier cake). It’s topped with a simple chocolate icing (50/50 cocoa powder + icing sugar, plus water to the desired consistency and a heaped teaspoon of coconut oil, whipped until smooth). SOOOO fudgy and delicious.

Decorated with popcorn, orange jaffa balls, chewy chocolate-dipped caramel balls, raspberries, caramel sauce and grated dark and white chocolate.
